Ingredients

1 lb (450g) flank steak, thinly sliced against the grain

1 cup quinoa, rinsed and drained

2 cups beef broth or water

2 tablespoons low-sodium soy sauce

1 tablespoon oyster sauce

1 tablespoon sesame oil

1 tablespoon vegetable oil

1 medium onion, sliced

2 cloves garlic, minced

1-inch piece of fresh ginger, grated

1 cup bell peppers (mixed colors), sliced

1 cup broccoli florets

1 cup snap peas, trimmed

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Salt and pepper, to taste

Instructions

Cook the Quinoa: In a medium-sized pot, bring the beef broth or water to a vigorous boil. Add the rinsed and drained quinoa to the boiling liquid. Once added, reduce the heat to low, cover the pot, and let it simmer gently for about 15 minutes, or until the quinoa becomes fluffy and all the liquid is absorbed. Afterward, remove the pot from heat and allow it to sit covered for an additional 5 minutes to finish cooking.

Prepare the Beef: While the quinoa is cooking, season the thinly sliced flank steak liberally with salt and pepper. In a large skillet or wok, heat the vegetable oil over medium-high heat until hot. Carefully arrange the beef slices in a single layer in the skillet. Sear the meat for approximately 2-3 minutes on each side or until nicely browned. Once cooked, remove the beef from the skillet and set it aside on a plate.

Stir-Fry the Veggies: In the same skillet used for the beef, add the sesame oil. Once heated, introduce the sliced onion, minced garlic, and grated ginger to the skillet. Sauté for about 1-2 minutes until the mixture becomes fragrant. Next, add the sliced bell peppers, broccoli florets, and trimmed snap peas. Continue to stir-fry the vegetables for about 4-5 minutes, ensuring they remain tender-crisp.

Combine Everything: Return the browned flank steak to the skillet with the sautéed vegetables. Pour in the low-sodium soy sauce and oyster sauce, stirring everything together to ensure an even coating. Cook for an additional 2 minutes, allowing the flavors to meld beautifully.

Fluff the Quinoa: After the quinoa has rested, use a fork to fluff it gently, separating the grains. Distribute the fluffy quinoa evenly among serving plates.

Serve: Generously spoon the savory beef and vegetable stir-fry over the prepared quinoa. Finish off with a garnish of sliced green onions and a light sprinkle of sesame seeds to add a delightful crunch.
