2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika (or regular paprika)

1/2 teaspoon dried oregano or thyme (optional)

Preparation of Potatoes: Begin by thoroughly washing and scrubbing the russet potatoes to remove any dirt. Once clean, pat them dry with a clean kitchen towel. For wedges, slice each potato in half lengthwise, then cut each half into 3-4 wedges depending on your preferred thickness.

    Soak the Wedges: To maximize crispiness, soak the potato wedges in a bowl of cold water for at least 30 minutes. This step helps remove excess starch which can prevent them from becoming crispy. Once soaked, drain the wedges and pat them dry using paper towels to remove excess moisture.

      Seasoning: In a large mixing bowl, combine the olive oil, garlic powder, smoked paprika, onion powder, salt, black pepper, and dried oregano or thyme (if you’re using). Add the dried potato wedges to the seasoning mix, and toss gently but thoroughly until each wedge is evenly coated.

        Preheating the Air Fryer: Preheat your air fryer to 400°F (200°C) for approximately 5 minutes. This step is crucial for ensuring that the wedges cook evenly and achieve that crispy texture.
