1 can (15 oz) chickpeas, drained and rinsed

1 small onion, roughly chopped

2 cloves garlic, minced

1/4 cup fresh cilantro, finely chopped

1 tsp ground cumin

1 tsp ground coriander

1/2 tsp baking powder

1/2 tsp salt

1/4 tsp black pepper

2-3 tbsp all-purpose flour (or chickpea flour for a gluten-free option)

For the Tahini Sauce:

1/4 cup tahini

2 tbsp freshly squeezed lemon juice (about 1 lemon)

1 garlic clove, minced

2-4 tbsp water (to adjust thickness)

Salt, to taste

For the Wrap:

4 whole wheat or pita wraps

1 cup romaine lettuce, shredded

1 cup cucumber, diced

1 cup tomatoes, diced

Optional: pickled onions or radishes for garnish

Instructions
 

Prepare the Falafel Mixture:

    - In a food processor, combine the drained chickpeas, chopped onion, minced garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and black pepper. Pulse the mixture until well combined but still slightly chunky; texture is key for crunchy falafel.

      - Add 2 tablespoons of flour to help bind the mixture. If it feels too wet, incorporate an extra tablespoon of flour. Once combined, cover the bowl and refrigerate for 30 minutes to allow the flavors to meld.

        Form the Falafel Balls:

          - After chilling, use your hands or a cookie scoop to shape the mixture into small balls or patties, approximately 1.5 inches in diameter. Ensure they are compact for optimal cooking.

            Air Fry the Falafel:

              - Preheat your air fryer to 375°F (190°C).

                - Lightly brush or spray the falafel balls with olive oil to enhance crispiness.
