For the Falafel:

1 cup dried chickpeas, soaked overnight

1 small onion, roughly chopped

2 cloves garlic, minced

1/4 cup fresh parsley, finely chopped

1/4 cup fresh cilantro, finely chopped

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon flour (you can use chickpea flour or all-purpose flour)

2 tablespoons olive oil (for drizzling)

For the Wrap:

4 large whole-grain or pita wraps

1 cup lettuce or mixed greens

1 tomato, diced

1 cucumber, sliced

1/2 red onion, thinly sliced

1/2 cup tahini sauce or yogurt sauce

Prepare the Falafel Mixture: Drain and rinse the soaked chickpeas under cold water. In a food processor, add the chickpeas, chopped onion, minced garlic, parsley, cilantro, cumin, coriander, baking soda, salt, black pepper, and flour. Pulse the mixture until it is coarse and well combined, ensuring to retain some texture without over-blending.

    Shape the Falafel: Moisten your hands slightly and take small portions of the mixture to form balls or patties, approximately the size of a golf ball. Arrange them on a plate or a baking sheet.

      Preheat the Air Fryer: Set your air fryer temperature to 375°F (190°C) and allow it to preheat for about 5 minutes.

        Air Fry the Falafel: Drizzle a little olive oil over the formed falafel, ensuring they are lightly coated. Place the falafel in the air fryer basket in a single layer, avoiding any overlaps. Depending on the size of your air fryer, you may need to cook them in batches. Air fry for 15-18 minutes, flipping halfway through the cooking time, until they are golden brown and crispy on the outside.

          Prepare the Wraps: While the falafel cooks, lay your wraps flat on a clean surface. Generously spread about a tablespoon of tahini sauce or yogurt sauce over the surface of each wrap for added flavor.

            Add the Fillings: Layer each wrap with a handful of fresh lettuce or mixed greens, then top with the diced tomato, sliced cucumber, and thinly sliced red onion.

              Assemble the Wraps: Once the falafel are golden and crispy, carefully place a few falafel in each wrap. Roll up the wraps tightly, tucking in the sides to secure the fillings within.

                Serve: Optionally, cut the wraps in half for easier eating. Serve immediately while warm, accompanied by extra sauce for dipping.
