Ingredients

2 cups cooked macaroni pasta

1 ½ cups shredded sharp cheddar cheese

½ cup grated Parmesan cheese

1 cup cream cheese, softened

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper to taste

1 cup breadcrumbs (panko for extra crunch)

2 large eggs

Cooking spray

Instructions

Prepare the Mac and Cheese Mixture: In a large mixing bowl, combine the cooked macaroni, shredded cheddar cheese, grated Parmesan cheese, softened cream cheese, garlic powder, onion powder, smoked paprika, and a pinch of salt and pepper. Use a fork or spatula to mix thoroughly until all ingredients are well combined and creamy.

Chill the Mixture: Cover the bowl tightly with plastic wrap and place it in the refrigerator for at least 30 minutes. This chilling step is essential as it helps firm up the mixture, making it easier to shape into balls.

Form the Balls: After chilling, remove the mixture from the fridge. Using a small ice cream scoop or your hands, scoop out portions of the mac and cheese mixture and roll them into approximately 1.5-inch balls. Place the formed balls on a baking sheet lined with parchment paper.

Set Up the Breading Station: In one medium-sized bowl, beat the two eggs until well mixed. In another bowl, pour in the breadcrumbs, ensuring it's ready for coating the mac and cheese balls.

Coat the Mac and Cheese Balls: Carefully roll each mac and cheese ball in the beaten egg, allowing any excess to drip off. Then roll the ball in the breadcrumbs, pressing gently to ensure an even coating. Continue this process until all the balls are coated.

Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes, ensuring it’s hot and ready for optimal cooking.

Air Fry the Balls: Lightly coat the air fryer basket with cooking spray to prevent sticking. Place the coated mac and cheese balls in the basket in a single layer, ensuring they don’t touch to allow for even air circulation. Spray the tops of the balls lightly with additional cooking spray for an extra crispy finish.

Cook: Air fry the balls for 8-10 minutes, or until they turn golden brown and crispy. For best results, gently flip the balls halfway through the cooking time to ensure even browning on all sides.

Serve: Once cooked, allow the mac and cheese balls to cool for about one minute before serving. Enjoy them warm with your favorite dipping sauces, such as marinara or ranch dressing.
