Prep the Zucchini: Begin by thoroughly washing the zucchinis under cool running water. Cut off both ends and slice them into thin rounds, approximately 1/4 inch thick. Transfer the zucchini slices to a colander and evenly sprinkle them with salt. Allow them to sit for 15-20 minutes to draw out excess moisture.

    Prepare the Coating: In a mixing bowl, mix together the panko breadcrumbs, grated Parmesan cheese, garlic powder, Italian seasoning, and black pepper. Stir well to ensure all ingredients are completely combined.

      Create the Egg Wash: In a separate bowl, crack the eggs and use a whisk or fork to beat them until they are smooth and uniform.
