Ingredients

2 cups Brussels sprouts, halved

1 large sweet potato, peeled and cubed

2 cups butternut squash, peeled and cubed

2 large carrots, sliced into rounds

1 red onion, cut into wedges

4 cloves garlic, minced

1/4 cup apple cider

3 tablespoons extra-virgin olive oil

2 tablespoons pure maple syrup

1 teaspoon dried thyme

1 teaspoon ground cinnamon

Salt and freshly cracked black pepper to taste

Fresh parsley, roughly chopped, for garnish (optional)

Instructions

Preheat the Oven: Set your oven to 400°F (200°C). To facilitate easy cleanup, line a large baking sheet with parchment paper.

Prepare the Vegetables: In a spacious mixing bowl, combine the halved Brussels sprouts, cubed sweet potato, cubed butternut squash, sliced carrots, and onion wedges. Toss the vegetables together until they are thoroughly blended.

Create the Cider Marinade: In a small bowl, whisk together the apple cider, extra-virgin olive oil, pure maple syrup, minced garlic, dried thyme, ground cinnamon, salt, and freshly cracked black pepper. Mix until all ingredients are well incorporated.

Coat the Vegetables: Drizzle the marinade over the prepared vegetable mixture. Toss gently until every piece is generously coated with the flavorful marinade, ensuring an even distribution for optimal taste.

Spread for Roasting: Transfer the marinated vegetables onto the prepared baking sheet, arranging them in a single layer. This allows for even roasting and enhances caramelization.

Roast to Perfection: Place the baking sheet in the preheated oven and roast the vegetables for 25-30 minutes. Stir halfway through the roasting time to promote even cooking and enhance caramelization, until the vegetables are tender and slightly golden.

Garnish and Serve: Once roasted, remove the baking sheet from the oven and let the vegetables cool for a few minutes. Carefully transfer them to a serving platter, optionally garnishing with freshly chopped parsley for a touch of color and freshness. Serve warm and enjoy the harmonious flavors that embody the spirit of autumn!
