Ingredients

4 slices of whole grain bread

1 large apple (preferably Granny Smith or Fuji), peeled and diced into small pieces

1 teaspoon ground cinnamon

1 tablespoon brown sugar (you can adjust this based on your desired sweetness)

1 cup Greek yogurt (choose plain or vanilla based on your preference)

1 tablespoon honey or maple syrup (optional, for additional sweetness)

2 tablespoons chopped walnuts or pecans (optional, for crunchy texture)

Fresh mint leaves (optional, for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C), ensuring it’s ready for the toast cups.

Prepare the Bread Cups: Use a rolling pin to flatten each slice of whole grain bread to a thin, even thickness. Gently press each slice into the cups of a muffin tin, shaping them to form little bread cups. If the edges are too large, trim them as needed for a snug fit.

Bake the Cups: Place the muffin tin in the preheated oven. Bake the bread cups for about 10-12 minutes, or until they turn golden brown and crisp. After baking, let them cool for a few minutes before carefully removing the toast cups from the muffin tin.

Cook the Apples: In a medium saucepan over medium heat, add the diced apples along with the ground cinnamon and brown sugar. Sauté the mixture for approximately 5-7 minutes, stirring occasionally, until the apples become tender and begin to caramelize. Once done, remove the saucepan from the heat.

Prepare the Yogurt Mixture: In a mixing bowl, combine the Greek yogurt with the honey or maple syrup (if using). Stir well until the mixture is smooth and creamy.

Assemble the Cups: Spoon a generous dollop of the yogurt mixture into each toasted bread cup. Top each one with a scoop of the warm apple cinnamon mixture, making sure to distribute it evenly.

Add Crunch: Finish by sprinkling the chopped walnuts or pecans on top of the filled cups to add an enjoyable crunch.

Garnish and Serve: For an extra touch of freshness and color, garnish with fresh mint leaves if you like. Serve the toast cups immediately while they're still warm for the best flavor and texture.
