¼ cup brown sugar, packed

¼ cup granulated sugar

1 large egg

1 cup unsweetened applesauce

½ cup vegetable oil

1 tsp vanilla extract

Zest of 1 lemon

1 cup fresh cranberries (or ¾ cup dried cranberries if fresh are unavailable)

½ cup chopped pecans or walnuts (optional)

Prepare the Oven and Muffin Tin: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners, or lightly grease each cup with cooking spray to prevent sticking.

    Mix the Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, rolled oats, baking powder, baking soda, salt, and ground cinnamon. Add the packed brown sugar and granulated sugar to the bowl. Whisk all the dry ingredients together until they are thoroughly mixed and free of lumps.

      Whisk the Wet Ingredients: In a separate bowl, whisk together the large egg, unsweetened applesauce, vegetable oil, vanilla extract, and lemon zest. Mix until the wet ingredients are well combined and smooth.
