4 large whole wheat tortillas

1 cup shredded cooked chicken (or substitute with cooked beans for a vegetarian option)

1 cup shredded cheddar cheese (or a blend of your favorite cheeses)

½ cup black beans, rinsed and drained

½ cup corn (fresh, frozen, or canned)

½ cup diced bell peppers (any color of your choice)

¼ cup finely chopped red onion

1 teaspoon taco seasoning (or your preferred spice blend)

2 tablespoons olive oil (or you can use cooking spray)

Salsa and sour cream for serving (optional)

Fresh cilantro, chopped for garnish (optional)

Instructions
 

Prepare the Filling: In a large mixing bowl, combine the shredded chicken (or beans), cheddar cheese, black beans, corn, diced bell peppers, chopped red onion, and taco seasoning. Stir the mixture thoroughly until all ingredients are well incorporated and evenly distributed.

    Assemble the Quesadillas: Place two tortillas on a clean, flat surface. Evenly distribute half of the filling mixture onto each tortilla, making sure to leave a small border around the edges for easy folding. Carefully place the remaining tortillas on top of the filling and gently press down to adhere them.

      Cook the Quesadillas: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Once the oil is hot, carefully place one assembled quesadilla in the skillet. Cook for approximately 3-5 minutes, or until the bottom is golden brown and the cheese begins to melt. Use a spatula to gently flip the quesadilla, adding the remaining tablespoon of olive oil to the pan if needed. Continue cooking for another 3-5 minutes, until the second side is also golden brown and the cheese is fully melted.

        Repeat Cooking: Once cooked, remove the quesadilla from the skillet and transfer it to a cutting board. Allow it to cool slightly for about a minute before slicing into wedges. Repeat the cooking process with the second quesadilla.
