Ingredients

For the Chicken Fajitas:

1 lb (450g) boneless, skinless chicken breasts

2 tablespoons olive oil

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1 medium onion, sliced

1 bell pepper (any color), sliced

Juice of 1 lime

For the Nachos:

8 oz (225g) tortilla chips

2 cups shredded cheddar cheese (or a blend of your favorite cheeses)

1 can (15 oz) black beans, drained and rinsed

1 cup pico de gallo (store-bought or homemade)

1 avocado, diced

Sour cream, for serving

Fresh cilantro, chopped, for garnish

Instructions

Prepare the Chicken:

    - Begin by preheating your oven to 375°F (190°C).

      - In a mixing bowl, whisk together the olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper to create a flavorful marinade.

        - Coat the chicken breasts thoroughly with the marinade, ensuring they are well-covered. Allow the chicken to marinate for at least 15 minutes for optimal flavor enhancement.

          Cook the Fajita Chicken:

            - Heat a large skillet over medium-high heat and add the marinated chicken breasts. Sauté for approximately 5-7 minutes on each side, or until the chicken is fully cooked and juices run clear.

              - Once cooked, remove the chicken from the skillet and let it rest for a couple of minutes before slicing it into thin strips. In the same skillet, add the sliced onions and bell peppers. Sauté for about 3-5 minutes, or until the vegetables become tender and slightly caramelized. Return the sliced chicken to the skillet along with the lime juice, stirring to combine everything well. Set aside the fajita mixture.

                Assemble the Nachos:

                  - On a large baking sheet, spread the tortilla chips in a single, even layer.

                    - Evenly distribute the cooked fajita chicken and vegetable mixture over the chips.

                      - Sprinkle the black beans on top in an even layer.

                        - Generously cover everything with the shredded cheese, ensuring all areas are well topped.

                          Bake the Nachos:

                            - Place the baking sheet in your preheated oven and bake for 10-12 minutes, or until the cheese is melted and bubbly. Keep an eye on the nachos to prevent burning.

                              Add Fresh Toppings:

                                - Once baked, remove the nachos from the oven and let them sit for a couple of minutes to cool slightly. Top the nachos with pico de gallo, diced avocado, and a generous dollop of sour cream. Finish with a sprinkle of fresh chopped cilantro for a burst of freshness.

                                  Serve:

                                    - Serve the sizzling baked fajita chicken nachos hot right from the baking sheet, encouraging everyone to dig in and enjoy the abundance of flavors!
