Ingredients

12 oz penne pasta

1 lb boneless, skinless chicken breast, diced into bite-sized pieces

2 tbsp olive oil

1 cup heavy cream

1 cup pesto sauce (store-bought or homemade)

1 cup grated Parmesan cheese, divided

2 cups fresh spinach leaves

1 tsp garlic powder

1 tsp onion powder

Salt and pepper, to taste

1 cup shredded mozzarella cheese

Fresh basil leaves, for garnish (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C) to ensure it's hot and ready for baking.

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to the package instructions until it reaches an al dente texture. Once cooked, drain the pasta and set aside.

Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with garlic powder, onion powder, salt, and pepper. Cook the chicken for about 5-7 minutes, stirring occasionally, until it's fully cooked and no longer pink. Once done, remove the skillet from the heat.

Prepare the Sauce: In a mixing bowl, whisk together the heavy cream, pesto sauce, and half of the grated Parmesan cheese until well combined and smooth.

Combine Everything: In the same skillet with the sautéed chicken, add the drained penne pasta and fresh spinach. Pour the pesto Alfredo sauce over the top. Gently toss everything together until all ingredients are evenly coated with the sauce.

Transfer to Baking Dish: Grease a 9x13 inch baking dish with a little olive oil or non-stick spray. Pour the chicken and pasta mixture into the dish, spreading it out evenly. Sprinkle the remaining Parmesan cheese and shredded mozzarella cheese on top.

Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes. You want the cheese to become bubbly and form a light golden crust on top.

Serve: Once baked, remove the dish from the oven and let it cool for a few minutes before serving. For an extra touch, garnish with fresh basil leaves. Serve warm and enjoy your indulgent Creamy Pesto Alfredo Chicken Penne Delight!
