8 oz. of your choice pasta (fusilli or farfalle recommended)

1 cup cherry tomatoes, halved

1 cup fresh spinach, roughly chopped

1 small red onion, thinly sliced

1/2 cup feta cheese, crumbled

1/4 cup Kalamata olives, pitted and sliced

1/3 cup balsamic vinegar

1/4 cup extra virgin olive oil

2 cloves of garlic, minced

1 tsp dried oregano

Salt and black pepper to taste

Fresh basil leaves, for garnish

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the pasta and cook according to package instructions until it reaches an al dente texture. Once cooked, drain the pasta and rinse it under cold water for a few seconds to stop the cooking process. Set it aside to cool completely.

    Prepare the Balsamic Dressing: In a small bowl, combine balsamic vinegar, extra virgin olive oil, minced garlic, dried oregano, and a generous pinch of salt and pepper. Whisk the ingredients together thoroughly until the dressing is well emulsified. Set the dressing aside to allow the flavors to blend.
