1 cup corn (canned or frozen, thawed if frozen)

1 cup black beans (canned, drained and rinsed or cooked from scratch)

1 ripe avocado, diced

¼ cup red onion, finely chopped

¼ cup fresh cilantro, chopped

Juice of 1 lime

Optional: shredded cheese (like cheddar or spicy pepper jack) for topping
