1 lb (450g) beef chuck, cut into ½-inch cubes

2 tablespoons olive oil

1 medium onion, diced

2 medium carrots, diced

2 stalks celery, diced

4 cups beef broth

1 cup dark beer (such as stout or porter)

1 teaspoon Worcestershire sauce

2 bay leaves

1 teaspoon dried thyme

1 cup potatoes, peeled and diced

1 cup shredded sharp cheddar cheese

1 cup heavy cream

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sear the Beef: In a large pot, heat the olive oil over medium-high heat. Season the beef cubes with salt and pepper, then add them to the pot in a single layer. Sear the beef for 5-7 minutes, turning occasionally, until it is browned on all sides. Once done, remove the beef from the pot and set it aside on a plate.

    Sauté the Vegetables: In the same pot, lower the heat slightly and add the diced onion, carrots, and celery. Sauté for about 5 minutes until the onion becomes translucent. Then, stir in the minced garlic and cook for an additional minute, until fragrant.

      Deglaze the Pot: Pour in the dark beer, using a wooden spoon to gently scrape the bottom of the pot, releasing any browned bits that add flavor. Allow the beer to simmer for 2-3 minutes, letting it reduce slightly.

        Combine and Simmer: Return the browned beef to the pot. Pour in the beef broth, followed by the Worcestershire sauce, bay leaves, dried thyme, and the diced potatoes. Stir everything together to combine. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 1 hour, or until the beef is tender.
