Ingredients

For the Beef Filling:

1 lb ground beef (preferably grass-fed)

2 cloves garlic, minced

1 small onion, finely chopped

1 bell pepper (red or yellow), diced

1 tablespoon soy sauce

1 tablespoon oyster sauce

1 teaspoon sesame oil

1 teaspoon fresh ginger, grated

Salt and pepper, to taste

2 green onions, chopped (for garnish)

For the Peach Glaze:

2 ripe peaches, pitted and diced

1/4 cup honey

1 tablespoon apple cider vinegar

1/2 teaspoon chili flakes (adjust to taste)

1 teaspoon cornstarch mixed with 1 tablespoon water (optional, for thickening)

For Assembly:

1 head of butter or iceberg lettuce, leaves separated

Fresh cilantro (optional, for garnish)

Lime wedges (for serving)

Instructions

Prepare the Peach Glaze: In a small saucepan over medium heat, combine the diced peaches, honey, apple cider vinegar, and chili flakes. Cook for approximately 5-7 minutes, stirring occasionally, until the peaches become soft and start to break down.

Blend the Glaze: Carefully transfer the peach mixture to a blender or use an immersion blender to puree it into a smooth glaze. If you prefer a thicker glaze, return the mixture to the saucepan, stir in the cornstarch slurry, and continue cooking for an additional 2-3 minutes until it thickens. Set the glaze aside to cool slightly.

Cook the Beef Filling: Heat a splash of cooking oil in a large skillet over medium heat. Add the chopped onions and diced bell pepper, sautéing them for 3-4 minutes or until softened. Once softened, stir in the minced garlic and grated ginger, cooking for another minute until fragrant.

Add the Ground Beef: Increase the heat to medium-high and add the ground beef to the skillet. Cook, breaking it apart with a spatula, until the beef is browned and fully cooked. Drain any excess fat if necessary.

Season the Beef: In the skillet, stir in the soy sauce, oyster sauce, and sesame oil. Season with salt and pepper to taste. Allow it to cook for an additional 2-3 minutes to let the flavors meld together. Once done, remove from heat.

Assemble the Wraps: Take a fresh lettuce leaf and spoon a generous amount of the beef filling into the center. Drizzle with the prepared peach glaze and top with chopped green onions and fresh cilantro, if desired.

Serve: Plate the wraps and serve them with lime wedges on the side for an extra burst of freshness. Enjoy your delightful wraps fresh!
