Ingredients

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 medium bell pepper (red or yellow), finely diced

1 small red onion, finely chopped

1 medium tomato, finely diced

1 jalapeño, seeded and minced (optional for a spicy kick)

1/4 cup fresh cilantro, chopped

Juice of 2 limes

1 teaspoon ground cumin

Salt and pepper to taste

12 small tortilla chips or mini taco cups

Avocado slices (for garnish)

Crumbled feta cheese (optional for garnish)

Instructions

Prepare the Salsa: In a large mixing bowl, combine the rinsed black beans, corn, finely diced bell pepper, chopped red onion, diced tomato, and minced jalapeño (if you want some heat).

Season the Mixture: Add the chopped cilantro, freshly squeezed lime juice, ground cumin, salt, and pepper to the bowl. Gently toss all the ingredients together until they are well mixed and evenly coated. Taste the mixture and adjust seasoning as needed for your preference.

Chill the Flavors: Cover the bowl with plastic wrap and place it in the refrigerator. Let the black bean corn salsa chill for at least 30 minutes. This step allows the flavors to meld, enhancing the overall taste of the salsa.

Assemble the Cups: When you're ready to serve, arrange the tortilla chips or mini taco cups on a colorful serving platter. Generously spoon the chilled black bean corn salsa into each chip or cup, making sure to fill them to the brim.

Garnish for Appeal: Top each salsa cup with a slice of creamy avocado. If desired, sprinkle crumbled feta cheese over the top for an added layer of flavor and texture.

Serve and Enjoy: Present the vibrant salsa cups at your gathering and enjoy the fresh, zesty flavors as they disappear quickly. These cups make for an exciting appetizer or a delicious snack!
