Ingredients

8 oz (225 g) fusilli or rotini pasta

1 cup cherry tomatoes, halved

8 oz (225 g) fresh mozzarella balls (bocconcini), halved

1 cup fresh basil leaves, loosely packed

1/2 cup extra-virgin olive oil

1/3 cup pine nuts, toasted

2 cloves garlic, minced

1/4 cup grated Parmesan cheese

Salt and freshly cracked black pepper, to taste

Balsamic glaze, for drizzling (optional)

Instructions

Cook the Pasta: Begin by bringing a large pot of salted water to a rolling boil. Add the fusilli or rotini pasta and cook according to the package instructions, until it reaches an al dente texture. Once cooked, drain the pasta and rinse it under cold running water to halt the cooking process. Allow the pasta to cool completely and set aside.

Prepare the Basil Pesto: In a food processor, combine the fresh basil leaves, toasted pine nuts, minced garlic, grated Parmesan cheese, and a pinch of salt. Pulse the ingredients several times until they are finely chopped. With the processor running, gradually drizzle in the extra-virgin olive oil until the mixture transforms into a smooth, creamy pesto. Be sure to stop occasionally to scrape down the sides of the bowl for an even blend. Taste the pesto and adjust the seasoning with additional salt and freshly cracked black pepper if needed.

Assemble the Salad: In a large mixing bowl, combine the cooled pasta, halved cherry tomatoes, and the mozzarella balls. Pour the prepared basil pesto over the salad and gently toss to coat all the ingredients thoroughly, ensuring an even distribution of flavors.

Final Seasoning: Taste the pasta salad and fine-tune the seasoning, adding more salt and freshly cracked black pepper if necessary. For an accent of sweetness, consider drizzling balsamic glaze over the salad right before serving.

Chill (Optional): For enhanced flavor, cover the salad with plastic wrap or a lid and refrigerate for at least 30 minutes to 1 hour, allowing the ingredients to meld together beautifully.

Garnish & Serve: Serve the pasta salad chilled or at room temperature. For a delightful finishing touch, garnish with extra fresh basil leaves and a sprinkle of additional grated Parmesan cheese.
