Ingredients

2 lbs pork tenderloin

1 ripe pineapple, peeled and sliced into rings

1/4 cup soy sauce

1/4 cup brown sugar

2 tbsp honey

2 tbsp fresh lime juice

2 cloves garlic, finely minced

1 tsp ground ginger

1 tsp allspice

1/2 tsp cayenne pepper (adjust according to your spice preference)

2 tbsp vegetable oil

Salt and freshly cracked black pepper to taste

Fresh cilantro or parsley, chopped, for garnish

Instructions

Marinate the Pork: In a large mixing bowl, whisk together the soy sauce, brown sugar, honey, lime juice, minced garlic, ground ginger, allspice, cayenne pepper, and vegetable oil until well combined. Place the pork tenderloin in a zip-top plastic bag and pour the marinade over it. Seal the bag securely, ensuring that the pork is evenly coated with the marinade. Refrigerate for at least 2 hours, but preferably overnight, to allow the flavors to deeply penetrate the meat.

Prepare the Grill: Preheat your grill to medium-high heat. Ensure the grill grates are thoroughly cleaned and lightly oiled to reduce the risk of sticking during cooking.

Grill the Pork: Remove the pork tenderloin from the marinade, allowing any excess marinade to drip off. Season generously with salt and freshly cracked black pepper. Place the pork on the hot grill and cook for 15-20 minutes, turning occasionally, until the internal temperature reaches 145°F (63°C), which guarantees a juicy and perfect pork tenderloin.

Grill the Pineapple: While the pork is grilling, add the pineapple rings to the grill. Grill them for 2-3 minutes on each side, or until they develop beautiful caramelized grill marks and soften slightly.

Rest the Pork: Once the pork is cooked to the proper temperature, remove it from the grill and let it rest for about 5-10 minutes. Resting allows the juices to redistribute throughout the meat, keeping it tender and flavorful.

Slice and Serve: After resting, slice the pork tenderloin into medallions. Arrange the slices on a serving platter alongside the grilled pineapple rings. Garnish the dish with freshly chopped cilantro or parsley for a burst of color and fresh flavor.

Enjoy: Serve the grilled pork and pineapple with sides like fragrant rice, hearty black beans, or a vibrant salad to create a complete Caribbean feast!
