1 bag (16 oz) thick-cut tortilla chips

8 oz smoked gouda cheese, shredded

8 oz sharp cheddar cheese, shredded

5 oz pepperoni slices

5 oz prosciutto, torn into bite-sized pieces

8 oz spicy chorizo, cooked and crumbled

1/2 cup black olives, sliced

1/2 cup pickled jalapeños

1/4 cup green onions, finely chopped

1 cup cherry tomatoes, halved

1/2 cup roasted red peppers, sliced

1/4 cup fresh parsley, finely chopped (for garnish)

For the Avocado Crema:

1 ripe avocado

1/2 cup sour cream

Juice of 1 lime

Salt and pepper to taste

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare the Avocado Crema: In a blender or food processor, add the ripe avocado, sour cream, lime juice, and a generous pinch of salt and pepper. Blend until the mixture is completely smooth. Taste and adjust the seasoning as desired, then set it aside.

      Layer the Chips: Take a large baking sheet and spread half of the tortilla chips in an even layer across the surface.

        Add the Toppings: Evenly sprinkle half of the shredded smoked gouda and sharp cheddar cheese over the chips. Follow with half of the pepperoni, torn prosciutto, crumbled chorizo, sliced black olives, pickled jalapeños, halved cherry tomatoes, and sliced roasted red peppers.

          Repeat Layers: For the second layer, add the remaining tortilla chips on top. Finish by topping with the rest of the cheeses and the remaining toppings, ensuring an even distribution.
