1 cup quinoa, rinsed and drained

2 cups beef broth (or water for a lighter option)

1 pound ground beef

2 cups broccoli florets (either fresh or frozen)

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened to room temperature

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish, optional)

Instructions
 

Cook the Quinoa: In a medium pot, combine the rinsed quinoa and beef broth (or water). Place the pot over medium-high heat and bring the mixture to a rolling boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes, or until all the liquid has been absorbed. Once cooked, fluff the quinoa with a fork and set it aside.

    Prepare the Beef: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for approximately 1 minute or until it becomes fragrant. Next, add the ground beef, breaking it apart with a spatula as it cooks. Season with onion powder, garlic powder, smoked paprika, salt, and pepper. Continue to cook for about 6-8 minutes, or until the beef is browned and fully cooked.

      Incorporate the Broccoli: Add the broccoli florets to the skillet with the cooked beef. Stir well to combine and allow the mixture to cook for an additional 4-5 minutes, or until the broccoli is tender and bright green. If using frozen broccoli, simply cook until heated through.
