Ingredients

4 large eggs

1 cup chili (canned or homemade, choose mild or spicy based on your preference)

1 cup shredded cheese (choose from cheddar, pepper jack, or a blend of your favorites)

4 slices of thick bread (opt for sourdough or whole grain for extra flavor)

2 tablespoons butter, softened to a spreadable consistency

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

Fresh cilantro or chopped green onions, for garnishing (optional)

Instructions

Prep the Ingredients: Before starting, gather all your ingredients. If you’re using homemade chili, ensure it’s warmed through. Preheat your broiler to low heat to prepare for finishing your sandwiches.

Make the Egg Mixture: In a medium mixing bowl, crack the eggs and whisk them together. Add in the garlic powder, onion powder, salt, and pepper, whisking until everything is well combined and slightly frothy.

Cook the Eggs: Heat a non-stick skillet over medium heat. Pour the whisked eggs into the skillet, and gently stir them with a spatula. Cook the eggs slowly until they are softly scrambled, which should take about 3-4 minutes. Once cooked to your desired consistency, remove the skillet from heat.

Assemble the Sandwiches: Take the butter and spread it generously on one side of each slice of bread. On the unbuttered side of two slices, evenly layer the cooked scrambled eggs, then add the chili, and finally, sprinkle the shredded cheese generously on top.

Top and Grill: Carefully place the remaining two slices of bread on top of the filled slices, ensuring the buttered side is facing outwards. Return the sandwiches to the skillet and cook on medium heat for about 3-4 minutes, or until the bottom is golden brown and crispy.

Melt the Cheese: Gently flip the sandwiches over with a spatula and cook for an additional 3 minutes until the other side is golden brown. After flipping, place the skillet under the preheated broiler for 1-2 minutes, keeping a close eye to prevent burning, until the cheese is bubbly and melted.

Serve: Once cooked, remove the sandwiches from the skillet and allow them to cool for about a minute. Cut each sandwich in half, garnish with fresh cilantro or chopped green onions if desired, and serve them hot for the ultimate cheesy delight.
