4 medium-sized Yukon Gold potatoes, peeled and diced

1 cup diced sweet potato

1 large onion, diced

2 cloves garlic, minced

1 bell pepper (red or yellow), diced

1 ½ cups breakfast sausage, cooked and crumbled (feel free to substitute with plant-based sausage for a vegetarian version)

1 teaspoon smoked paprika

1 teaspoon thyme (fresh or dried)

Salt and black pepper to taste

2 cups shredded cheddar cheese (or your preferred cheese blend for variety)

1 cup milk

4 large eggs

¼ cup chopped fresh parsley (for garnish)

Preheat and Prepare Baking Dish: Begin by preheating your oven to 375°F (190°C). While it’s heating, prepare a 9x13-inch baking dish by greasing it with cooking spray or a light drizzle of olive oil to prevent sticking.
