Ingredients

4 cups fresh green beans, trimmed and cut into 1-inch pieces

1 cup sharp cheddar cheese, shredded

1 cup cream of mushroom soup (can be homemade or store-bought)

½ cup milk

1 medium onion, finely diced

2 cloves garlic, minced

1 teaspoon soy sauce

½ teaspoon ground black pepper

1 teaspoon salt

1 cup French fried onions (store-bought or homemade)

½ teaspoon paprika (for garnish)

Cooking spray or olive oil (for greasing the baking dish)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). This ensures the casserole bakes evenly.

Blanch the Green Beans: Bring a large pot of salted water to a rolling boil. Once boiling, add the trimmed green beans and blanch them for 3-4 minutes, until they are bright green and tender-crisp. After blanching, immediately transfer the beans to an ice bath using a slotted spoon to stop the cooking process. Once cooled, drain well and set aside.

Sauté Onions and Garlic: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté, stirring frequently, until the onions become translucent, about 3-4 minutes. Add the minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant and lightly golden.

Mix the Sauce and Veggies: In a spacious mixing bowl, whisk together the cream of mushroom soup, milk, soy sauce, ground black pepper, and salt until smooth. Stir in the sautéed onions and garlic, followed by the blanched green beans and half of the shredded sharp cheddar cheese. Gently mix until all the green beans are evenly coated with the sauce.

Assemble the Casserole: Lightly grease a 9x13 inch baking dish with cooking spray or olive oil to prevent sticking. Pour the green bean mixture into the dish, spreading it evenly for even cooking. Sprinkle the remaining shredded cheddar cheese on top, then layer the French fried onions across the surface for added crunch.

Add Some Flair with Paprika: For an extra dash of flavor and color, sprinkle the paprika evenly over the top of the casserole.

Bake the Casserole: Place the assembled casserole in the preheated oven and bake for 25-30 minutes, or until the edges are bubbly and the top is a beautiful golden brown.

Cool and Serve: Once baked, carefully remove the casserole from the oven and allow it to cool for about 5 minutes. This resting time allows the flavors to meld together. Serve warm and enjoy this rich, cheesy green bean casserole bake with family and friends!
