2 cups cooked, shredded chicken

1 cup salsa (choose mild or hot based on your spice preference)

2 cups shredded Mexican blend cheese

4 large flour tortillas

1 medium onion, finely diced

1 red bell pepper, diced

1 green bell pepper, diced

1 teaspoon ground cumin

1 teaspoon garlic powder

Salt and freshly ground black pepper, to taste

2 tablespoons extra-virgin olive oil

Fresh cilantro, chopped (optional, for garnish)

Sour cream or guacamole, for serving

Instructions
 

Preheat the Oven: Set your oven temperature to 375°F (190°C) to heat it up while you prepare the dish.

    Sauté the Vegetables: In a large skillet, pour in the olive oil and warm over medium heat. Add the diced onion, red bell pepper, and green bell pepper. Sauté the mixture for about 5 minutes, stirring occasionally, until the vegetables are soft and fragrant.

      Incorporate Chicken and Salsa: Add the shredded chicken to the skillet along with the salsa, cumin, garlic powder, salt, and pepper. Mix well and cook for an additional 3-4 minutes, stirring occasionally, until everything is thoroughly heated. Remove the skillet from heat and set the chicken filling aside.

        Assemble the Quesadilla Layers: In a greased baking dish, start your layering process. Lay one tortilla at the base, then spread half of the chicken filling evenly on top. Sprinkle 1 cup of shredded cheese over the chicken. Place another tortilla on top, followed by the remaining chicken mixture and another cup of cheese. Finally, top it with the last tortilla and finish with the final cup of shredded cheese.

          Bake to Perfection: Cover the baking dish with aluminum foil to retain moisture. Bake in the preheated oven for 20 minutes.
