2 cups heavy cream

1 cup whole milk

2 cups shredded sharp cheddar cheese

1 cup shredded Gruyère cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Use butter or cooking spray to thoroughly grease a 9x13 inch baking dish; this will help prevent sticking.

    Prepare the Potatoes: Rinse and peel the Yukon gold potatoes. Utilize a mandoline slicer or a sharp knife to cut the potatoes into 1/8-inch thick rounds. To avoid browning, place the sliced potatoes in a bowl of cold water until ready to use.

      Make the Cheese Sauce: In a medium saucepan, melt the butter over medium heat. Once the butter is completely melted, add the flour, whisking continuously to form a roux. Cook the roux for about 2 minutes, allowing it to bubble lightly. Gradually pour in the heavy cream and whole milk, whisking until smooth and free of lumps. Continue cooking, whisking regularly, for approximately 5-7 minutes or until the mixture thickens to a creamy consistency.

        Add Seasoning and Cheese: Mix in the garlic powder, onion powder, dried thyme, and season with salt and pepper to taste. Off the heat, stir in the shredded cheddar and Gruyère cheese until they are melted and the cheese sauce is creamy and well blended.
