In a large, oven-safe skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Stir in minced garlic and cook for an additional minute.
Stir in shredded chicken and frozen mixed vegetables. Cook until vegetables are warmed through, around 3-5 minutes.
In a large bowl, combine stuffing mix with chicken broth, thyme, rosemary, paprika, and black pepper. Stir until well combined.
Pour the stuffing mixture over the chicken and vegetable mixture in the skillet. Gently stir to combine.
Sprinkle shredded cheddar cheese generously on top of the mixture.
Transfer the skillet to the preheated oven and bake for about 25-30 minutes, or until heated through and cheese is bubbly and golden brown.
Remove the skillet from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley before serving.
