4 medium zucchinis, spiralized into noodles (zoodles)

1 lb ground beef (or ground turkey for a lighter option)

1 small onion, finely diced

2 cloves garlic, minced

1 red bell pepper, diced

1 packet taco seasoning (or homemade blend)

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 can (14 oz) diced tomatoes with green chilies

2 cups shredded Mexican cheese blend (such as cheddar, Monterey Jack, or pepper jack)

1 cup sour cream or Greek yogurt

½ cup chopped fresh cilantro (optional, for garnish)

Salt and pepper to taste

Olive oil (for cooking)

Instructions
 

Preheat the oven: Adjust your oven temperature to 350°F (175°C) to prepare for baking.

    Prepare the Zoodles: Utilize a spiralizer to create zucchini noodles (zoodles). Once spiralized, place the zoodles into a clean kitchen towel and gently twist to extract excess moisture. Set the zoodles aside for later.

      Cook the beef: In a large skillet, pour in a tablespoon of olive oil and heat it over medium heat. Add the diced onion and minced garlic, sautéing for about 2-3 minutes until they have softened. Introduce the ground beef (or turkey) into the skillet, breaking it apart with a spoon as it cooks. Continue cooking until the meat is browned, usually around 5-7 minutes. Drain any excess fat if necessary.

        Incorporate veggies and spices: Mix in the diced red bell pepper, taco seasoning, rinsed black beans, corn, and diced tomatoes. Allow the mixture to cook for an additional 5 minutes, letting the flavors blend together beautifully. Season with salt and pepper to taste.

          Combine with Zoodles: In a large mixing bowl, gently fold the zoodles into the meat and vegetable mixture until the zoodles are evenly coated.

            Layer the casserole: Grease a 9x13-inch casserole dish, then spread half of the zoodle mixture evenly across the bottom. Add dollops of half of the sour cream (or Greek yogurt) and sprinkle with 1 cup of shredded cheese. Layer the remaining zoodle mixture on top, followed by the rest of the sour cream and the remaining cheese.

              Bake the casserole: Cover the casserole with aluminum foil and place it in the preheated oven. Bake for 25 minutes, then remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.

                Garnish and serve: Once baked, take the casserole out of the oven and let it cool for about 5 minutes. If desired, garnish with chopped cilantro. Serve warm and enjoy!
