In a large skillet, heat olive oil over medium heat. Add the diced onion and celery, sautéing until they are soft and translucent (about 5 minutes). Stir in the minced garlic and cook for an additional minute until fragrant.
Add the ground turkey to the skillet. Cook until fully browned, breaking it apart with a wooden spoon. Season with thyme, sage, salt, and pepper.
Once the turkey is cooked, reduce the heat to low. Stir in the cooked quinoa, fresh cranberries, and chopped cherries. Allow the mixture to cook an additional 3-4 minutes, just until the cranberries begin to burst and soften. Remove from heat and let cool slightly.
Grease the star-shaped baking pan lightly. Spoon the turkey and fruit mixture into the pan, pressing lightly to pack it down. Sprinkle the shredded mozzarella cheese evenly over the top of the filling.
Using a pastry brush, lightly brush the beaten egg along the edges of the star, which will give it a golden and shiny finish while baking.
Place the filled pan in the preheated oven and bake for 20-25 minutes, or until the filling is hot and the cheese is melted and bubbly.
Remove from the oven and let cool for a few minutes. Gently pull around the edges to help release the star and carefully invert onto a serving platter. Sprinkle with fresh parsley for garnishing.
