Cherry Tomato Burrata Pasta

400g cherry tomatoes, halved

200g fresh burrata cheese

3 cloves of garlic, finely minced

1/4 cup extra virgin olive oil

1/4 cup fresh basil leaves, finely chopped (plus extra for garnish)

1 teaspoon red pepper flakes (optional for heat)

Salt and freshly ground black pepper to taste

Zest of 1 lemon

Freshly grated Parmesan cheese for serving

Cook the Pasta: In a large pot, bring a generous amount of salted water to a rolling boil. Add the pasta and cook it according to the package instructions until it reaches an al dente texture. Before draining, reserve 1 cup of the starchy pasta water. Drain the remaining water and set the pasta aside in the pot.
