1 lb (450g) cooked chicken, shredded

1 cup chili (store-bought or homemade)

6 large eggs

½ cup milk

1 tsp ground cumin

1 tsp smoked paprika

Salt and pepper to taste

1 cup shredded cheese (cheddar or Mexican blend)

4 large flour tortillas

¼ cup green onions, sliced

1 avocado, sliced (for serving)

Sour cream (for serving)

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with cooking spray or oil to prevent sticking.

    Prepare the Chicken Mixture: In a large mixing bowl, combine the shredded chicken with the chili, ground cumin, smoked paprika, and half of the shredded cheese. Season the mixture with salt and pepper according to your taste, and mix thoroughly until well combined.

      Whisk the Eggs: In a separate bowl, crack the eggs and whisk them together with the milk. Add a pinch of salt and pepper, continuing to whisk until the mixture is smooth and fully combined.

        Assemble the Burritos: Lay all four flour tortillas flat on a clean surface. Evenly distribute the chicken and chili mixture among the tortillas, placing it in the center of each. Roll each tortilla tightly, ensuring the filling is secure, and place them seam-side down in the greased baking dish.

          Pour the Egg Mixture: Carefully pour the egg mixture evenly over the assembled burritos in the baking dish. Finish by sprinkling the remaining shredded cheese and sliced green onions over the top.
