1 cup bell peppers, diced (use a vibrant mix of red, yellow, and green)

1/2 cup corn (fresh off the cob or canned, drained)

1/4 cup fresh cilantro, chopped

4 large lettuce leaves (romaine or butter lettuce work best)

For the Salsa:

1 cup ripe tomatoes, diced

1/2 cup red onion, finely chopped

1 jalapeño, seeded and minced (adjust based on spice preference)

1 tablespoon fresh lime juice

Salt to taste
