14 oz (400g) firm tofu, pressed and cut into 1-inch cubes

1/4 cup soy sauce

2 tablespoons sesame oil

2 tablespoons rice vinegar

1 tablespoon brown sugar

4 cloves garlic, minced

1 teaspoon chili flakes (adjust to taste)

1 teaspoon fresh ginger, grated

1 tablespoon cornstarch

1 bell pepper, cut into 1-inch chunks (choose your favorite color)

1 red onion, cut into wedges

Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes before grilling)

Fresh cilantro or sliced green onions, for garnish

Marinate the Tofu: In a spacious mixing bowl, combine soy sauce, sesame oil, rice vinegar, brown sugar, minced garlic, chili flakes, and grated ginger. Whisk the mixture together until well blended. Gently add the cubed tofu to the marinade, making sure each piece is fully coated. Cover the bowl with plastic wrap and let the tofu marinate for a minimum of 30 minutes, or up to 2 hours in the refrigerator for enhanced flavor.

    Prepare the Skewers: If you are using wooden skewers, place them in a bowl of water and let them soak for 30 minutes. This step will help prevent them from burning on the grill. While the skewers soak, preheat your grill to medium heat.

      Assemble the Skewers: Once the tofu has marinated, it's time to assemble your skewers. Start by threading a piece of marinated tofu onto each skewer, followed by a chunk of bell pepper and a wedge of red onion.
