1 block firm tofu, drained and pressed

2 tablespoons soy sauce

1 tablespoon fresh lime juice

1 teaspoon chili paste or sriracha (adjust for spice preference)

1 tablespoon cornstarch

2 tablespoons vegetable oil

For the Rolls:

8 rice paper sheets

1 cup cooked vermicelli noodles, cooled

1 large carrot, peeled and julienned

1 cucumber, julienned

1 red bell pepper, thinly sliced

1 ripe avocado, sliced

A handful of fresh cilantro leaves

A handful of fresh mint leaves

For the Dipping Sauce:

3 tablespoons creamy peanut butter

2 tablespoons soy sauce

1 tablespoon honey or maple syrup (for a vegan option)

1 tablespoon fresh lime juice

1 teaspoon chili sauce (adjust to taste)

Water to achieve desired consistency

Instructions
 

Prepare the Tofu:

    - Begin by cutting the pressed tofu into approximately 1/2-inch wide strips.

      - In a medium bowl, whisk together the soy sauce, fresh lime juice, and chili paste. Add the tofu strips to the marinade and gently toss to coat. Allow the tofu to marinate for at least 15 minutes to absorb the flavors.

        - After marinating, evenly sprinkle cornstarch over the tofu strips, ensuring each piece is well-coated.

          Cook the Tofu:

            - In a non-stick skillet, heat the vegetable oil over medium-high heat. Once hot, carefully place the marinated tofu strips in the skillet. Cook for 3-4 minutes on each side until the tofu is golden brown and crispy. Remove from heat and allow the tofu to cool slightly.

              Prep the Rice Paper:

                - Fill a shallow dish or large plate with warm water. Dip one rice paper sheet into the water for about 10-15 seconds until it becomes softened but not too mushy. Once softened, place it flat on a clean, dry surface.

                  Assemble the Rolls:
