Ingredients
  

1 lb large shrimp, peeled and deveined

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1/2 small red onion, finely chopped

1 cucumber, diced

1/4 cup fresh cilantro, chopped

Juice of 2 limes

3 tablespoons olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Optional: 1 jalapeño, finely chopped (for a spicy kick)

Instructions
 

Prepare the Shrimp:

    - Bring a large pot of salted water to a boil. Once boiling, add the peeled and deveined shrimp. Cook for 2-3 minutes, or until the shrimp turn pink and opaque. Keep an eye on them to avoid overcooking.

      - After cooking, immediately drain the shrimp and transfer them to a bowl filled with ice water. This will halt the cooking process and cool the shrimp quickly.

        Prepare the Dressing:

          - In a small mixing bowl, combine the lime juice, olive oil, garlic powder, salt, and pepper.

            - If you enjoy a bit of heat, stir in the finely chopped jalapeño at this stage. Whisk all the ingredients until fully blended.

              Combine Ingredients:

                - In a large mixing bowl, carefully combine the cooked and chilled shrimp with the diced avocados, halved cherry tomatoes, finely chopped red onion, diced cucumber, and fresh cilantro. Gently toss to combine without mashing the avocados.

                  Add the Dressing:

                    - Pour the freshly prepared dressing over the shrimp and vegetable mixture. Toss gently to ensure all the ingredients are evenly coated with the dressing.

                      Chill:

                        - Cover the bowl with plastic wrap or a lid and refrigerate the salad for at least 30 minutes. This chilling time allows the flavors to meld and enhances the overall taste of the salad.

                          Serve:

                            - After chilling, give the salad a final gentle toss. Taste and adjust seasoning with additional salt and pepper if needed.
