1 cup quinoa, rinsed and drained

2 cups vegetable broth (for cooking quinoa)

4 medium ripe tomatoes (preferably heirloom), tops removed and hollowed

1 cup cucumber, finely diced

1/2 cup red bell pepper, finely diced

1/2 cup red onion, finely chopped

1 cup fresh basil leaves, chopped

1 tablespoon balsamic vinegar

1 tablespoon olive oil

Salt and pepper, to taste

Microgreens or additional basil for garnish (optional)

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth. Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pot and simmer for about 15 minutes, or until the quinoa is fluffy and all liquid has been absorbed. Once cooked, remove from heat and let it cool to room temperature.

    Prepare the Tomatoes: While the quinoa is cooling, prepare the tomatoes. Carefully use a spoon to scoop out the insides, including the pulp and seeds, from each tomato. Be cautious to leave the outer shells intact as they will hold the filling. Place the removed pulp in a bowl to reserve for later use.

      Mix the Filling: In a large mixing bowl, combine the cooled quinoa, diced cucumber, red bell pepper, red onion, chopped basil, and the reserved tomato pulp. Drizzle the mixture with balsamic vinegar and olive oil. Season with salt and pepper to taste. Gently toss the ingredients together until evenly combined, ensuring each component is well incorporated.
