Ingredients

4 medium zucchinis

1 cup crunchy peanut butter

3 tablespoons soy sauce (use tamari for a gluten-free option)

2 tablespoons rice vinegar

1 tablespoon honey or maple syrup

1 tablespoon sesame oil

1 tablespoon sriracha (optional for an extra kick)

1/4 cup warm water (for thinning the sauce)

1/2 cup shredded carrots

1/2 cup red bell pepper, thinly sliced

1/4 cup green onions, chopped (plus more for garnish)

1/4 cup fresh cilantro, chopped (plus more for garnish)

2 tablespoons sesame seeds

Lime wedges, for serving

Instructions

Prepare the Zoodles: Begin by spiralizing the zucchinis using a spiralizer or a vegetable peeler to create long, noodle-like strands. Place the zoodles in a large bowl to keep them fresh while preparing the sauce.

Make the Sauce: In a medium mixing bowl, combine the crunchy peanut butter, soy sauce, rice vinegar, honey (or maple syrup), sesame oil, and sriracha if you prefer some heat. Gradually pour in the warm water and whisk continuously until the mixture achieves a smooth and pourable consistency. Adjust the thickness by adding more water if desired.

Combine the Ingredients: Drizzle the prepared peanut sauce over the zoodles and gently toss until every strand is well coated. Add the shredded carrots, thinly sliced red bell pepper, and half of the chopped green onions and cilantro. Continue to toss gently until all ingredients are evenly mixed.

Chill and Serve: Cover the bowl and place the zoodles in the refrigerator for 20-30 minutes to allow the flavors to blend beautifully. When ready to serve, transfer the zoodles to serving plates and sprinkle with sesame seeds, the remaining green onions, and cilantro. Serve chilled alongside lime wedges, which can be squeezed over the dish for a refreshing zing.
