1 medium onion, finely chopped

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 teaspoon dried thyme

1 teaspoon dried rosemary

4 cups chicken or vegetable broth

1 cup heavy cream

1 cup cream cheese, softened to room temperature

1 cup assorted charcuterie meats (e.g., salami, prosciutto, chorizo), cooked and chopped

1 cup assorted cheeses (e.g., Brie, cheddar, gouda), cut into cubes

1/2 cup olives (optional), pitted and sliced

1/2 cup pickles (optional), finely chopped

Salt and pepper to taste

Fresh parsley, chopped, for garnish

Sauté the Vegetables: In a large, heavy-bottomed pot, heat the olive oil over medium heat. Once the oil is shimmering, add the finely chopped onion.
