Ingredients

8 oz (250g) fettuccine or your preferred pasta shape

1 lb (450g) boneless, skinless chicken breasts, diced into bite-sized pieces

2 cups broccoli florets, trimmed

1 medium onion, finely diced

3 cloves garlic, minced

4 cups low-sodium chicken broth

1 cup heavy cream

1 teaspoon Italian seasoning

Salt and freshly ground black pepper, to taste

1 cup freshly grated Parmesan cheese

2 tablespoons extra virgin olive oil

Fresh parsley, chopped (for garnish)

Instructions

Sauté Chicken: In a large, deep skillet or sauté pan, heat the olive oil over medium-high heat. Season the diced chicken with salt and pepper. Add the chicken to the pan in a single layer and cook, stirring occasionally, until it's golden brown and fully cooked—approximately 5 to 7 minutes. Once done, transfer the chicken to a plate and set aside, leaving any drippings in the pan.

Sauté Vegetables: In the same skillet, add the diced onion and minced garlic. Sauté for about 3 to 4 minutes, or until the onion is soft and translucent, stirring frequently to avoid burning the garlic.

Add Broccoli and Pasta: Toss in the broccoli florets and sauté for an additional 2 minutes for a slight tender-crisp texture. Next, pour in the uncooked pasta and the chicken broth. Bring the mixture to a boil, stirring occasionally.

Cook Pasta: Once boiling, reduce the heat to a simmer and cover the skillet. Let it cook for 10-12 minutes, or until the pasta is al dente and most of the broth has been absorbed, giving it a good stir every few minutes to prevent sticking.

Create Creamy Sauce: After the pasta has cooked, stir in the heavy cream, Italian seasoning, and grated Parmesan cheese. Mix thoroughly until the sauce is rich and creamy, and the cheese has melted. Return the cooked chicken to the skillet, stirring well to ensure everything is evenly combined.

Season and Serve: Taste the dish and adjust the seasoning with more salt and freshly ground black pepper if necessary. Serve hot, garnished with chopped fresh parsley for a pop of color and freshness.

Enjoy your delightful Creamy Chicken and Broccoli One-Pan Pasta!
