Ingredients

12 oz (340g) fettuccine or linguine

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

3 cloves garlic, minced

4 cups (120g) fresh spinach leaves

1 cup (240ml) chicken broth

1 cup (240ml) heavy cream

1 cup (100g) grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

Red pepper flakes, for garnish (optional)

Fresh parsley, chopped (for garnish)

Instructions

Sauté Chicken: In a large skillet, add the olive oil and heat over medium heat. Season the chicken pieces generously with salt, pepper, and Italian seasoning. Once the oil is hot, carefully add the chicken to the skillet. Cook, stirring occasionally, until the chicken is evenly browned and no longer pink in the center, approximately 6-8 minutes. Once cooked, remove the chicken from the skillet and set aside on a plate.

Sauté Garlic: In the same skillet, add the minced garlic. Sauté over medium heat for about 1 minute, stirring constantly, until the garlic becomes fragrant and slightly golden but be cautious to avoid burning.

Add Liquid: Pour in the chicken broth, bringing it to a gentle simmer. Use a wooden spoon to scrape up any browned bits stuck to the bottom of the skillet, as they add depth of flavor to the dish.

Cook Pasta: Carefully add the fettuccine (or linguine) into the simmering broth, ensuring that the pasta is well submerged. Cover the skillet with a lid and cook according to the package instructions—typically about 10-12 minutes—stirring occasionally to prevent sticking.

Stir in Cream and Spinach: Once the pasta is al dente, lower the heat and slowly stir in the heavy cream and grated Parmesan cheese until well combined. Add the fresh spinach and the reserved cooked chicken back into the skillet. Stir everything until the spinach wilts and the sauce becomes rich and creamy.

Season and Serve: Taste your pasta and adjust the seasoning as needed with additional salt, pepper, or a sprinkle of red pepper flakes for some heat. Before serving, garnish generously with chopped fresh parsley for a burst of color and flavor.

Enjoy: Dish out the warm creamy pasta into bowls and relish every bite of this flavorful, comforting one-pan meal!
