Ingredients

8 oz (about 2 cups) small pasta (such as shells or elbow)

1 large cucumber, diced

1 cup cherry tomatoes, halved

1/2 cup red onion, finely chopped

1/2 cup Greek yogurt (or substitute with sour cream)

1/4 cup mayonnaise

2 tablespoons apple cider vinegar

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

1 teaspoon garlic powder

Salt and freshly ground black pepper to taste

Optional: 1/4 cup feta cheese, crumbled for garnish

Instructions

Cook the Pasta: In a large pot, bring lightly salted water to a rolling boil. Add the pasta and cook according to the package instructions until al dente, which should take around 8-10 minutes. Once cooked, drain the pasta in a colander and rinse it under cold water to stop the cooking process. Set the cooled pasta aside in a large mixing bowl.

Prepare the Vegetables: While the pasta is cooking, take the time to prepare your vegetables. Dice the cucumber into bite-sized pieces, halve the cherry tomatoes, and finely chop the red onion. Once ready, combine all the vegetables in the mixing bowl with the cooled pasta.

Make the Dressing: In a separate smaller bowl, whisk together the Greek yogurt and mayonnaise until smooth. Then, add the apple cider vinegar, chopped fresh dill (or dried dill), garlic powder, and a sprinkle of salt and freshly ground black pepper. Continue to whisk until the dressing is well-combined and creamy.

Combine Ingredients: Pour the dressing over the pasta and vegetable mixture in the bowl. Gently toss all the ingredients together until the pasta and vegetables are evenly coated with the dressing.

Chill: To enhance the flavors, cover the salad with plastic wrap or a lid. Refrigerate for at least 30 minutes to allow the flavors to meld and develop.

Serve: Just before serving, give the pasta salad a gentle toss to redistribute the dressing. Optionally sprinkle crumbled feta cheese on top for an extra layer of flavor. Enjoy this refreshing salad chilled as a delicious side dish or a light main course!
