Creamy Feta & Watermelon Bowl

Ingredients
  

4 cups watermelon, diced into bite-sized cubes

1 cup feta cheese, crumbled

1/2 cup cucumber, diced small

1/4 cup red onion, finely chopped

1/4 cup fresh mint leaves, chopped roughly

1/4 cup extra virgin olive oil

2 tablespoons balsamic glaze (store-bought or homemade)

Juice of 1 juicy lime (about 2 tablespoons)

Salt and freshly ground black pepper, to taste

Optional: 1/4 cup toasted walnuts or pistachios, roughly chopped for garnish

Instructions
 

In a large mixing bowl, combine the diced watermelon, diced cucumber, finely chopped red onion, and roughly chopped mint leaves. Gently toss to mix the ingredients together without mashing the watermelon.

    In a separate small bowl, whisk together the extra virgin olive oil, balsamic glaze, fresh lime juice, and a pinch of salt and pepper. Blend until you achieve a smooth, creamy dressing.

      Drizzle the dressing over the watermelon mixture, then gently toss again to ensure all ingredients are evenly coated in the delightful dressing.
