2 cups fresh ripe figs, stems removed and halved

1 cup vegetable broth (preferably low-sodium)

1 cup heavy cream

1/4 cup packed brown sugar

1 tablespoon freshly squeezed lemon juice

1 teaspoon pure vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

Sea salt to taste

Fresh thyme leaves for garnish

Crusty bread for serving (optional)

Instructions
 

In a medium saucepan, add the halved figs and vegetable broth. Heat the mixture over medium heat until it begins to simmer. Allow it to cook for approximately 10 minutes, stirring occasionally, until the figs are tender and their natural juices are released.

    Once cooked, remove the saucepan from heat and let the mixture cool for a few minutes. Carefully use an immersion blender to puree the fig mixture until it reaches a smooth and creamy consistency. If you don't have an immersion blender, transfer the mixture to a regular blender in batches and blend until smooth.

      Return the smooth fig puree to the saucepan and gently stir in the heavy cream, brown sugar, lemon juice, vanilla extract, cinnamon, nutmeg, and a pinch of sea salt. Mix thoroughly until all the ingredients are well incorporated.

        Place the saucepan back on the stove over medium-low heat. Let the soup simmer for an additional 5-7 minutes, stirring frequently to prevent sticking. Taste and adjust the seasoning by adding more salt if desired.

          Once heated through, ladle the soup into warm bowls and garnish with fresh thyme leaves for a pop of color and aroma. Serve with warm crusty bread on the side for a delightful dipping experience.
