Ingredients

4 boneless, skinless chicken breasts (approximately 1.5 pounds)

Salt and freshly ground black pepper, to taste

2 tablespoons extra virgin olive oil

4 cloves garlic, minced

1 cup low-sodium chicken broth

1 cup heavy cream

1 teaspoon Italian seasoning blend

1 cup freshly grated Parmesan cheese

5 ounces fresh spinach, roughly chopped

1 tablespoon freshly squeezed lemon juice

Fresh parsley, finely chopped (for garnish)

Instructions

Season the Chicken: Begin by patting the chicken breasts dry with paper towels. Season both sides generously with salt and freshly ground black pepper, ensuring they are well-coated.

Sear the Chicken: Heat a large skillet over medium-high heat and add the olive oil. Once the oil is shimmering, carefully add the seasoned chicken breasts. Sear each side for about 5-7 minutes until they are golden brown and fully cooked (internal temperature should reach 165°F/75°C). Once cooked, transfer the chicken to a plate and set aside.

Sauté Garlic: In the same skillet where you cooked the chicken, lower the heat to medium. Add the minced garlic to the skillet and sauté for about 1 minute until it becomes fragrant but not browned, stirring frequently to prevent burning.

Make the Sauce: Carefully pour in the chicken broth, using a wooden spoon to scrape up any flavorful browned bits from the bottom of the skillet. Bring to a gentle simmer and let it cook for about 2-3 minutes. Then reduce the heat to low and stir in the heavy cream, Italian seasoning, and grated Parmesan cheese. Mix well until the cheese has completely melted, and the sauce is rich and creamy.

Add Spinach: Gradually stir in the chopped fresh spinach, allowing it to wilt into the sauce for approximately 2-3 minutes. The spinach should become tender but still vibrant in color.

Combine Chicken and Sauce: Return the seared chicken breasts to the skillet, spooning the creamy sauce generously over each piece. Allow the mixture to simmer for an additional 2-3 minutes to ensure the chicken is heated through. Finally, add the lemon juice for a bright touch. Taste the sauce and adjust seasoning if necessary.

Garnish and Serve: Once plated, remove the skillet from heat and sprinkle freshly chopped parsley over the top for added color and flavor. Serve hot with accompaniments like fluffy rice, al dente pasta, or crusty bread perfect for soaking up the delicious sauce.
