Creamy Garlic Mashed Potatoes

2 pounds Yukon Gold potatoes, peeled and quartered

1 head of garlic

1/2 cup unsalted butter, softened at room temperature

1 cup heavy cream

1/2 cup whole milk

Salt, to taste

Freshly ground black pepper, to taste

1/4 cup freshly chopped chives or parsley (optional, for garnish)

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the head of garlic to expose the individual cloves. Drizzle with olive oil and wrap the garlic in aluminum foil. Place it in the preheated oven and roast for 30-35 minutes, or until the cloves are soft and caramelized. After roasting, allow it to cool slightly, then gently squeeze the softened cloves out of their skins into a small bowl.

    Boil the Potatoes: In a large pot, add the quartered Yukon Gold potatoes and cover them with cold water. Add a generous pinch of salt. Bring the pot to a boil over medium-high heat. Once boiling, reduce the heat to a simmer and cook the potatoes until they are fork-tender, about 15-20 minutes.

      Heat the Cream: While the potatoes are cooking, combine the heavy cream and whole milk in a small saucepan. Warm the mixture over low heat, stirring occasionally, until it is gently heated through but do not allow it to come to a boil.

        Mash the Potatoes: Once the potatoes are done, drain them well and return them to the pot. Add the softened butter and the roasted garlic cloves (that have been squeezed from their skins) to the potatoes. Using a potato masher or ricer, mash the potatoes until they reach your desired texture. For an ultra-smooth finish, a ricer is highly recommended.
