12 oz pasta (choose from fettuccine, penne, or spaghetti)

6 oz goat cheese, crumbled

1 cup heavy cream

3 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup spinach (fresh or frozen)

1 teaspoon dried oregano

Salt and black pepper, to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions
 

Cook the Pasta: Start by bringing a large pot of salted water to a rolling boil. Add your choice of pasta and cook as per the package directions until you achieve an al dente texture. Before draining, reserve 1 cup of the pasta water to help adjust the sauce later. Then, drain the pasta and set it aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for approximately 30 seconds, or until it becomes fragrant. Keep an eye on it to prevent burning.

      Add Tomatoes and Spinach: Incorporate the halved cherry tomatoes into the skillet. Cook for 3–4 minutes, stirring occasionally, until they start to soften. If using frozen spinach, add it now and cook until it is heated through. For fresh spinach, wait until just before mixing in the pasta.

        Create the Sauce: Reduce the skillet's heat to low, then pour in the heavy cream. Stir thoroughly to combine with the tomatoes. Gradually add the crumbled goat cheese, allowing the mixture to simmer for 2–3 minutes. Stir continuously until the cheese melts and the sauce reaches a creamy consistency.

          Combine Pasta and Sauce: Slowly add the drained pasta to the skillet, using a gentle folding motion to combine all ingredients. Ensure the pasta is thoroughly coated with the creamy sauce. If the sauce appears too thick, incrementally add the reserved pasta water until the desired consistency is achieved.
