Creamy Jalapeño Chicken Casserole

2 cups cooked rotisserie chicken, shredded

1 cup uncooked white rice

1 can (15 oz) black beans, drained and rinsed

1 cup corn (frozen or canned, drained if using canned)

1 medium onion, diced

3 cloves garlic, minced

2-3 fresh jalapeños, diced (remove seeds for milder flavor)

1 can (10 oz) diced tomatoes with green chilies

1 can (10 oz) cream of chicken soup

1 cup sour cream

1 cup shredded cheddar cheese

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh cilantro, chopped, for garnish

Preheat Your Oven: Begin by preheating your oven to 350°F (175°C) so it’s ready for the casserole.

    Prepare the Rice: In a medium saucepan, cook the rice according to the package instructions. Once cooked, set the rice aside to cool slightly.

      Sauté the Vegetables: Heat a splash of olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, sautéing for about 3-4 minutes until the onion is translucent and fragrant.

        Mix All Ingredients: In a spacious mixing bowl, combine the shredded rotisserie chicken, cooked rice, black beans, corn, sautéed onion and garlic, diced jalapeños, diced tomatoes with green chilies, cream of chicken soup, sour cream, shredded cheddar cheese, ground cumin, and smoked paprika. Season with salt and pepper to taste. Stir everything thoroughly until the mixture is well blended.

          Transfer to Casserole Dish: Lightly grease a 9x13 inch casserole dish with cooking spray or butter. Pour the creamy chicken mixture into the dish and use a spatula to spread it out evenly.

            Bake the Casserole: Cover the dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes, then remove the foil and bake for an additional 10-15 minutes, or until the top is golden and bubbly.
