1 cup couscous

1 1/4 cups vegetable broth

1/2 cup cream cheese, softened

1/4 cup Greek yogurt

1 tablespoon lemon zest (about 1 lemon)

2 tablespoons fresh lemon juice (about 1 lemon)

1/4 cup fresh parsley, finely chopped

2 tablespoons fresh dill, chopped

1/4 teaspoon garlic powder

Salt and pepper to taste

1/2 cup cherry tomatoes, halved

1/4 cup feta cheese, crumbled

Olive oil for drizzling

Fresh herbs for garnish (optional)

Instructions
 

Cook the Couscous:

    - In a medium saucepan, heat the vegetable broth over medium-high heat until it comes to a rapid boil.

      - Stir in the couscous, ensuring it is fully submerged. Cover the saucepan with a lid, remove from heat, and let it sit for about 5 minutes.

        - Once the couscous has absorbed the broth, use a fork to fluff it up and allow it to cool slightly.

          Prepare the Creamy Mixture:

            - In a large mixing bowl, combine the softened cream cheese and Greek yogurt.
