Ingredients

250g pasta of your choice (fettuccine or tagliatelle are recommended)

200g mixed mushrooms (shiitake, cremini, and button mushrooms), sliced

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 tablespoon miso paste (choose white or yellow for a milder taste)

1 cup heavy cream (or coconut cream for a vegan alternative)

1/4 cup grated Parmesan cheese (optional; sub with nutritional yeast for a vegan option)

1 tablespoon soy sauce

1 teaspoon freshly ground black pepper

Salt to taste

Fresh parsley, chopped for garnish

Optional: chili flakes for a spicy kick

Instructions

Cook the Pasta: Begin by bringing a large pot of salted water to a rolling boil. Carefully add your pasta and cook according to the package directions until al dente. Before draining, reserve 1 cup of the pasta water for later use, then drain the pasta and set it aside.

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Once the oil is shimmering, add the finely chopped onions. Sauté for about 5 minutes, or until the onions are soft and translucent. Then, add the minced garlic and continue sautéing for another minute, allowing the garlic to become fragrant.

Cook the Mushrooms: Introduce the sliced mushrooms to the skillet. Stir occasionally as they cook, allowing them to brown and release their juices. This should take approximately 5-7 minutes.

Prepare the Creamy Sauce: In a small bowl, whisk together the miso paste, heavy cream, soy sauce, and freshly ground black pepper until you have a smooth and creamy mixture. Pour this sauce into the skillet with the sautéed mushrooms and onions, stirring to combine. Allow the sauce to come to a gentle simmer.

Combine Pasta and Sauce: Next, add the drained pasta to the skillet and toss everything together until the pasta is evenly coated in the creamy mushroom sauce. If the sauce appears too thick, gradually stir in your reserved pasta water until you reach your desired consistency.

Add Finishing Touches: Stir in the grated Parmesan cheese (or nutritional yeast, if opting for vegan). Taste the dish and adjust seasoning with salt as needed. For an extra kick, feel free to add a sprinkle of chili flakes.

Serve: Dish up the creamy miso mushroom pasta onto plates, finishing with a garnish of freshly chopped parsley. Enjoy your delectable dish hot and fresh from the pan!
