2 tablespoons olive oil

1 medium onion, finely chopped

3 garlic cloves, minced

300g chicken breast, cut into bite-sized pieces

250g mushrooms, sliced (button or cremini work well)

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

400ml heavy cream

150g cream cheese, softened

100g grated Parmesan cheese (plus extra for topping)

150g shredded mozzarella cheese

Fresh parsley, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 180°C (350°F) to ensure it's hot and ready for baking.

    Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the penne pasta and cook according to the package instructions until it reaches al dente texture. Once done, drain the pasta and set it aside.
